True Puerh originates in the Xishuangbanna Prefecture of Yunnan Province of China where fresh tea leaves are plucked, left uncooked (in the Sheng tradition) or pan roasted (in the Shou tradition), sun dried, tightly packed into traditional styles such as briquettes or bings, then left to ferment over time.
